Cape & Kantary Hotels is proud to announce the complete renovation of ‘Nimman Bar & Grill’ in August 2025, the signature dining venue at Kantary Hills Hotel, Chiang Mai. The updated restaurant will feature a contemporary international kitchen, offering authentic Thai, Northern Thai, and popular European dishes to guests from around the world.
“The transformation of Nimman Bar & Grill was a significant project,” said Mrs. Tirawan Taechaubol, Business Owner and Project Development Manager of Cape & Kantary Hotels. “I envisioned a refreshed concept that would seamlessly unite design and culinary excellence – a space that feels contemporary yet embraces the charm of Thai culture. We completely redefined the look and feel of the restaurant, redesigning it in a contemporary style featuring light-toned wood that seamlessly blends elements of Northern Thai culture. We carefully selected wooden furniture to create a sense of comfort and semi-privacy for people dining.
Floor-to-ceiling glass walls were installed to allow natural light into the space, creating an open environment. Orange accents in different shades were added throughout the restaurant.
“Chiang Mai’s artistic spirit was also a major inspiration. We have incorporated artwork by local artists in the restaurant to celebrate and showcase Northern Thai culture. The design draws from the iconic red-brick walls of Chiang Mai’s Old City, which inspired our terracotta-toned floor tiles. We also added lush greenery throughout the space to soften the ambiance and to create a sense of calm.”
“Beyond the physical transformation, our team of chefs worked together to redesign the menu, updating more than 50% of the dishes. Guests can now enjoy an enticing mix of Northern Thai signature dishes, popular Thai favourites, premium European cuisine and a touch of Japanese influence. To complement this, we have also introduced new specialty drinks and signature cocktails, created exclusively for Nimman Bar & Grill.”
The redesigned Nimman Bar & Grill will accommodate up to 227 guests with both indoor and outdoor seating. The space remains true to the concept of blending contemporary style with Northern heritage – with an interior that is warm, welcoming and artistically rooted in local culture. The updated menu showcases a blend of Thai and International influences. Guests can enjoy Northern delicacies such as a Northern Thai Appetiser Platter, Massaman Lamb Curry, Kaeng Ho (Glass Noodle Stir Fry), Khao Soi (Beef Shank), Crying Tiger Steak, Stewed Beef Shank Curry, Fermented Pork Salad, Smoked Duck Salad, Cured Pork and Fluffy Egg Steamed in Banana Leaf, Young Jackfruit Salad and more. These are complemented by European favourites such as premium beef and lamb steaks, pasta, pizza, soups, fresh salads and a wide array of desserts. A selection of refined cocktails and exclusive signature beverages is also available, perfect for both casual dinners and social gatherings with friends or business associates.
Nimman Bar & Grill will be open daily from 6:00-24:00 hrs. Guests can enjoy a daily breakfast buffet and look forward to seasonal food festivals and special buffet evenings throughout the year.
